The smaller the blueberry the more skin exists where pigment rich in anthocyanin is stored. Many food processors desire small wild blueberries for mini muffins, scones, pretzels and bagels. Air dried blueberries will last up to 12 months when properly stored (away from intense heat and light). Dried wild blueberries are best suited for thick, heavier batters. Their low moisture content makes them perfect for stirring into stuffing and folding into cookie dough, muffins and scones.
